Cheesecake Stuffed Strawberries

Today, I got off work a bit early and decided since it was a little nice outside, I'd

whip up a quick treat for the kids before they got home from school. YUM!! I
made these stuffed strawberries just in jiffy time and took a minute to DEVOUR
mine in peace and quiet (Never a dull moment after 5pm in this house!!!) before
everyone got home.. **Finger Licking GoOod** Totally put that extra
uuuumph on my day!! **Looooove It*
Artsy Ingredients Needed
1 pound large strawberries
8.0z. block of cream cheese - soft
3-4 tablespoons powdered sugar
(decrease or increase per your sugar tolerance)
Graham Crackers
(& to be a fatty fat fat like me "Chessmen Cookies Crushed")
1 Teaspoon vanilla extract
(you can even substitute for almond, or lemon, etc)
Ready?? Lets Whip Up Some Desserts!!
To begin, rinse your strawberries and cut off the top part away.
Clean out the inside of the strawberries. I used a pairing knife

You should have nice hallow center already in your
strawberry so it should be easy to carve it out.

Slice a bit of the bottom away so your
strawberries can stand up straight on their own and set aside.
Combine cream cheese, powdered sugar and vanilla extract with a mixer or

whip together by hand to blend until very soft. You can scoop your mixture
into a piping bag or (since I was out of piping bags <--I hardly use them, lol),
I simply used a soup spoon to scoop and fill the strawberries with my mixture.

Once you are done stuffing, dip your strawberries in your graham cracker
crumbs or crushed chessmen cookies (I filled a freezer bag and crushed
mine to crumbs) To add a bit of sass to my strawberries, I added chocolate
chips and reeses pieces to a few (BIG SMILES FROM CALEY!!). I also added
some coconut shavings to the left over filling and stuffed a few more for
myself. When Caley got home, he decided why not add some chocolate
fudge to the mix, and I certainly didn't argue with that.
We made more and added some!!
T'was a beautiful sugar high evening here in the Moon house!! I almost
kicked myself as now Sia's acting like a maniac and it's almost bedtime!!
*It's going to be a LONG night BUT it was ALL worth it!!*

How cute! I will definitely be trying this on Friday for my small group. I make my dip with cream cheese, marshmallow puff, a little bit of brown sugar, and vanilla extract. It is yummy too! I LOVE how you carved out the strawberries and garnished them with cookies, graham crackers, chocolate. I LOVE it!

ohgoodgolly these look totally utterly delicious! I might like to add a dash of amaretto or hazelnut liqueur just to be a tad more indulgent. ;)
